Page 5 of 11 TOFU QUICHE 2 Tsp olive oil 1 medium onion, chopped 1 medium green pepper, chopped 2 1/2 cups sliced mushrooms (or choose any other vegetables of your choice or which you may prefer) 2 cloves garlic 2 cups medium-firm tofu 2 TBS nutritional yeast 1 tsp sea salt Sliced tomatoes for garnish Heat oil in a medium sized skillet. Sauté vegetables and garlic until limp. In a large bowl crumble or mash tofu. Add sautéed vegetables and yeast and salt if desired.] Preheat oven to 350 degrees. Spread tofu mixture evenly into a 9 1/2 - 10" quiche pan. Bake 30 - 40 minutes until the edges of tofu start to brown. Garnish with tomatoes.
