Page 8 of 11 SCRAMBLED TOFU This is a quick and easy dish to prepare, delightful to eat. Great for a quick lunch or a light supper. It is one of our favourite lunch dishes. Eat it on top of toast. If you have leftovers, you can also add it cold to your salad for the evening meal. It adds flavor and texture to the salad. - Sauté 1 small onion and a few cloves of garlic (according to your taste) in a little olive oil. Add 1/2 tsp curry powder and 1/2 tsp turmeric and cook until soft. This will give it a yellow colour and look like scrambled egg.
- Add chopped tomato and continue cooking. If you wish you could also add chopped scallions with greens, mushrooms, parsley, or any other vegetables, but this is optional.
3. Add 1 packet crumbled or mashed tofu. - Add flavorings - try different ones until you find the best flavor your family enjoys - Sea
salt or spike, a little cayenne pepper if you like it a bit hotter, Tamari or Braggs Liquid Aminos, onion powder, herbs to your taste or Nutritional Yeast. 5. Add some finely chopped parsley at the end of you like that. That's all you have to do. Quick and easy and delicious. Nicer than any scrambled eggs you've ever tasted.
