- 1 large onion
- 2-3 cloves of garlic
- 1 spoon full of curry
- half a teaspoon of cumin
- sea salt to taste
- a dash of cayenne pepper
- (Miso and Braggs Liquid Amino Acids optional)
- enough water to cover tops of beans
To prevent gas in this recipe and all the others, soak the beans for several hours, either overnight or let them sit in water all morning. Withstanding the problem of gas, soaking the beans enlarges them, makes them more tender and allows them to expand and soak up water to their full capacity. *Place soaked beans in a large saucepan with water and bring to a boil. Let them simmer for half an hour or until they are almost tender. *Chop the onion coarsely and the garlic finely and then add them to the simmering beans. *Mix the curry powder with a quarter of a cup of water and add this along with the cumin and several pinches of salt to the pot. *Turn the element down to low and let the concoction simmer until the onions are almost transparent, the beans are soft and the aroma is permeating the air. The optional Miso and Braggs Liquid Amino Acids make this recipe come alive. You'll notice 'Braggs' is a frequent companion in our dishes. It is a healthy salt substitute and makes recipes even more delicious. You can find it in your local health food store and we highly recommend it as a constant in your cupboard.
