Page 1 of 11 My husband and I have passed our mid-fifties - the time when the foods we have been eating over the years begin to catch up on us. Colin had a dangerously high cholesterol count, chronic sinus and he was getting heavier and heavier (he also liked junk foods when away from my clutches!). I also had a few problems. We began to research more and realized the negative aspects of eating meat and dairy products. So about four years ago, since coming to America, we made a radical change and eliminated these foods from our table. The results have been remarkable. Colin lost weight, his sinuses have cleared and he is in better health than he has been for years. And can I let out a private secret - he even stopped snoring! Our daughter, who was asthmatic, has not had a sign of asthma since. We have never eaten better in our lives. It has been so exciting trying so many different kinds of bean and lentil dishes. And we have also added tofu to our menu - an item we had never used before. It is so versatile and takes on the flavor of whatever you cook it with. Would you like to try some tofu dishes too? Here's a few of the ones that we have really enjoyed. Visitors have loved them too. And it's inexpensive. TOFU TAMALE PIE 2 onions chopped 2 green peppers, chopped 2 cloves garlic, minced 4 TBS vegetable oil 3 cups tofu (1 1/2 LB) 2 lbs. tomatoes fresh or tinned 2 cups sweet corn (fresh is best) 1 cup water 2 TBS chili powder 2 TBS natural soy sauce 1 tsp cumin 1 cup corn meal Sauté onions, peppers and garlic in the oil. Add the remaining ingredients, place the casserole in the oven and bake it at 350 for about 1 hour.
