Why Vegan Recipes? Print E-mail

The recipes that you will find here are all Vegan. That means they have no meat or dairy products. Now just a minute. Don't turn off. You'll find some great recipes here. Plus, I'm not saying that you shouldn't eat meat. I don't have a Biblical premise for saying that. The only warning the Bible has about meats is that we should eat the clean meats, fish and fowl. Even then, you are not under law, and you can eat what you like. However, I believe that God didn't give health laws just for the sake of it. I believe that if we keep to God's dietary laws and eat only the clean meats and fish, we will save ourselves from diseases and will have His protection. God, who created the animals, knows which are the safest for us to eat.

What are the clean meats? You can read about it in Leviticus 11:1-47. The clean meats are those that 1) chew their cud, and 2) have cloven hooves. Pork is consumed in massive amounts, but it is not a clean meat. Pigs do not chew their cud. Pork carries a trichoma worm, which if taken into the system will cause trichinosis, a disease for which there is no cure. Also, over 80 per cent of today's pigs have pneumonia when killed for human consumption.

What are the clean fish? Those that have fins and scales. God's word says that all others are an abomination. Leviticus 11:12 NIV SASYS, "Anything living in the water that does not have fins and scales is to be detestable to you." This eliminates oysters, shrimps, crabs, clams, eels, catfish, lobsters, and crayfish and all shellfish. These are the scavenger fish and live on pollution. God knows what he is saying, and I myself, prefer to abide by God's rules for health.

For optimum health, it is even better to decrease your intake of the clean meats and fish. The National Heart Foundation recommends that we eat meat no more than three times a week. If your children don't like meat, don't make them eat it - they are better with out. You can get all the protein you require from beans and vegetables. If you decrease your meat intake, you will also decrease the chemicals, growth hormones, drugs and antibiotics that are now part of the animals we eat. Over 90 percent of all chickens are infected with a viral cancer, leukosis, when killed for human consumption. Do you still want chicken for supper tonight?

If you would like to decrease your meat intake, what will you eat for supper on the nights that you don't have meat? That's a big problem, isn't it? Well, here's the answer. Oh, I better tell you why I don't have meat and dairy. Its not because I'm a vegetarian freak or don't think you should kill animals. It is for my health's sake. I ate so much meat growing up that it nearly ruined my colon. I have only been off meat and dairy for the last four or five years, but I wish I had eliminated it years ago.

I grew up in New Zealand in a dairy country. The biggest part of our diet is meat and diary. My father had two 22-cubit foot deep freezes that were full of meat. He was a hunter, a deerstalker, a duck shooter, and he also killed all his own beef and lamb. Her knew the butcher trade and made all our own sausages. We lived on meat for breakfast, lunch and dinner! Wow, my poor colon! You see, meat has no fiber! It causes constipation. Eighty percent of all diseases stem from problems in the colon. The most important thing you can do for your health is to keep your colon clean and healthy.

Because of a prolapse and not wanting to go the conventional way of hysterectomy, I decided to eliminate all fiber-less foods from my diet. I had immediate improvement. In fact, the only way I function is by eating a very high fiber diet, with no fiber-less foods. I think back to when I was a child and I was constipated even then. It was agonizing even as a child. The only time I eat meat now is on very special occasions such as Christmas and Thanksgiving. I cook turkeys and lamb for the whole family on these occasions.

What about the dairy products? I was also stuffed up and having constant colds. From the time I was married, I had no sugar or white flour in the house. As the children grew, I began to grind my wheat and bake my own bread. I lived on a healthy diet. My friends thought I was a fanatic even then! But it still wasn't perfect for my system. I tried eliminated dairy. Once again a great improvement.

My daughter, Pearl, was asthmatic all her life. She eliminated diary and has not has asthma since that time about five years ago. My husband, Colin, was a big meat eater and always made fun of my weird health ideas. He thought he could eat what he liked. But he developed chronic sinus that became a terrible problem to him. He had to live on tablets and it also hindered his preaching. His cholesterol was dangerously high and he lived from one cold to another. He was putting on excess weight, so in the end, he said, "Okay, I'll do it. I'll join you. But you better cook me good meals!" In no time his sinus left and it has never returned. He lost weight. He no longer gets regular colds. And he even stopped snoring!

Here's another testimony. Val Stares, the director of Above Rubies in Australia, has been staying with me for six weeks. She came for our daughter's wedding. When Val arrived she was very ill with a hiatus hernia and also gallstones. The night following the wedding she was in such pain she nearly died. We were all very concerned. Fortunately we had staying with us a wedding guest who was a chiropractor. He adjusted her and suggested she commence a three-week fast with two enemas daily. What a terrible thing to do on a holiday? But she was so desperate that she complied. She found amazing relief through this remedy. Plus a great surprise! Val was also a chronic asthmatic and could not go longer than three hours without ventolin. The doctors said she would be on ventolin for the rest of her life. But to her great surprise, as she continued her fast, she also no longer needed ventolin! What a victory.

After coming off the fast, I encouraged her to eliminate all meat and dairy products from her diet. On a couple of occasions she had butter, and both times her breathing was affected badly again. For over five weeks now, Val has had no ventolin, as long as she keeps off dairy products. She is getting stronger every day. Before she came to America, she felt she may have to give up the ministry of Above Rubies because she was too sick to cope. Now, she is bursting with health and energy.

Here's an interesting fact for you. Humans are the only mammal species that continue to drink milk once they are weaned. Milk is a food that God has provided especially for infants. A baby should be fed mother's milk from the breast until it is ready to wean (usually 2 -3 years of age) after which they do not require milk again. How's that for a radical statement? Don't discard it. Think about it for awhile.

The protein in cow's milk, casein, is 300 times stronger than in human milk. It cannot be assimilated by our bodies and forms hard curds in the digestive tract. This leads to excessive mucous in the body and poor elimination. Thirty-five natural enzymes in raw milk are destroyed with pasteurizing. Without these enzymes milk cannot be properly digest.

But how can I get calcium you ask? You can obtain all the calcium you require from leafy green vegetables, fresh and dried fruits, seeds (especially sesame seeds), nuts and legumes. Plant based calcium is of higher quality and more readily absorbed by the body that dairy based calcium. Think - that's where the cow gets her calcium! I get plenty of calcium because I use a lot of tahini in our cooking. Tahini is ground sesame seeds and sesame seeds are very high in calcium.

Because we are all better off without the meat and dairy, we constantly look for new vegan recipes. We have never enjoyed food so much in our lives. The recipe book that is my favorite is Country Life Vegetarian Cookbook.
